Description
This butternut soup is simple and delicious. First we roast it to extract all the moisture and then blend it into a thick soup. It is delicious with some freshly toasted bread, or as a starter if you are entertaining guests. This can be thinned down with some veg stock or even some cream if you prefer. This is also a great hack for using as a sauce with some gnochi and some additional pieces of roasted butternut.
